Ingredients (for 2 trays):

Procedure :

  1. Prepare the dough :

    • Beat the eggs with the sugar and a pinch of salt until you obtain a smooth mixture.
    • Add the softened butter and the grappa, continuing to mix.
    • Sift the flour over the mixture and mix well until you obtain a smooth, compact dough.
    • Knead by hand on a floured surface for 5-10 minutes, until the dough is elastic.
  2. Roll out the dough :

    • Using a rolling pin, roll out the dough on a floured surface, trying to obtain a thin sheet (about 2 mm thick).
    • Once the dough is rolled out, cut strips about 5 cm wide.
  3. Frying the chatter :

    • Heat plenty of oil in a large frying pan (the oil should be hot enough, but not smoking, about 170°C). You can test the temperature of the oil by dipping a piece of dough: if it rises to the surface immediately, the oil is ready.
    • Fry the chiacchiere a few at a time, turning them to cook them evenly. When they are golden and crispy, remove them from the oil with a slotted spoon and let them drain on absorbent paper to eliminate the excess oil.
  4. Decorate and serve :

    • Once cooled, sprinkle the chiacchiere with icing sugar to taste.
    • Serve and enjoy Carnival with these fragrant and delicious chiacchiere!
