Crispy and Delicious Chiacchiere: The Perfect Dessert for Carnival
Ingredients (for 2 trays):
- 3 eggs (2 whole and one yolk)
- 60 g of butter
- Half a glass of grappa (or other liqueur of your choice)
- 600 g of flour
- 50 g of sugar
- A pinch of salt
- Grated lemon peel
- Powdered sugar (for dusting)
- Seed oil (for frying)
Procedure :

Prepare the dough :
- Beat the eggs with the sugar and a pinch of salt until you obtain a smooth mixture.
- Add the softened butter and the grappa, continuing to mix.
- Sift the flour over the mixture and mix well until you obtain a smooth, compact dough.
- Knead by hand on a floured surface for 5-10 minutes, until the dough is elastic.

Roll out the dough :
- Using a rolling pin, roll out the dough on a floured surface, trying to obtain a thin sheet (about 2 mm thick).
- Once the dough is rolled out, cut strips about 5 cm wide.

Frying the chatter :
- Heat plenty of oil in a large frying pan (the oil should be hot enough, but not smoking, about 170°C). You can test the temperature of the oil by dipping a piece of dough: if it rises to the surface immediately, the oil is ready.
- Fry the chiacchiere a few at a time, turning them to cook them evenly. When they are golden and crispy, remove them from the oil with a slotted spoon and let them drain on absorbent paper to eliminate the excess oil.

Decorate and serve :
- Once cooled, sprinkle the chiacchiere with icing sugar to taste.
