Scampi Tartare with Crispy Asparagus, Bread Chips and Ginger: Gourmet Appetizer
A fresh and refined dish that combines the delicacy of scampi with the crunchiness of asparagus, enriched with fragrant bread chips and a spicy touch of fresh ginger. All enhanced by a 100% Italian extra virgin olive oil , for a unique and classy result.
Ingredients (for 2 people):

300 g of fresh scampi

4 green asparagus

4 slices of homemade bread (preferably naturally leavened)

100% Italian extra virgin olive oil to taste

Salt to taste

Freshly ground black pepper to taste

Juice of 1/2 lemon
Preparation:

Prepare the scampi tartare:
Clean the scampi, removing the shell and head. Cut the pulp. Season with a drizzle of extra virgin olive oil , lemon juice, a pinch of salt and black pepper. Mix gently and set aside. -
Prepare the crispy asparagus:
Wash the asparagus, remove the hardest part of the stem. Heat a drizzle of EVO oil in a pan and sauté the asparagus for a few minutes, keeping them crunchy. Add a pinch of salt and let cool. -
Prepare the bread chips:
Cut the bread slices into thin slices. Fry them in hot EVO oil until golden brown. -
Chef's touch with ginger:
Finely chop the piece of fresh ginger and mix it delicately with the scampi tartare to add a spicy and fresh note. -
Composition of the dish:
Arrange the tartare in the centre of the plate and finish with a drizzle of raw extra virgin olive oil.
