Traditional Red Tortellini for a Romantic Valentine's Dinner.
Bring Italian tradition to the table with a romantic twist: homemade red tortelloni, filled with ricotta and mascarpone, perfect for Valentine's Day or a special dinner.
For the dough
- 250 g 00 flour
- 100 g Mutti double tomato paste
- 30 ml warm water
- 20 ml extra virgin olive oil
For the filling
- 300 g ricotta
- 50 g mascarpone
- 100 g Parmesan cheese
- Salt to taste
- Pepper to taste
Mix the flour with the tomato paste, warm water, and extra virgin olive oil until you obtain a smooth dough. Let it rest for a few minutes. In a bowl, mix together the ricotta, mascarpone, Parmesan, salt, and pepper until smooth. Roll out the red dough into a thin sheet. Spoon the filling (or use a piping bag) onto the dough.
Chef's advice
Serve them with melted butter and sage for a delicate flavour.
