Oven-Roasted Potatoes with White Truffle Mayonnaise
Servings: 2-3 people
Time: 35-40 minutes

Ingredients
- 500g yellow-fleshed potatoes
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 1 sprig of fresh rosemary
- 2-3 tablespoons of White Truffle Flavored Mayonnaise – Eramo Tartufi
- Optional: Parmigiano Reggiano flakes for garnish
Method
- Preheat oven to 200°C (390°F).
- Wash and cut the potatoes in half or quarters, into uniform pieces.
- Season the potatoes in a bowl with oil, salt, pepper, and rosemary needles.
- Spread the potatoes on a baking sheet lined with parchment paper and bake for 25-30 minutes, turning halfway through, until golden brown.
Serve hot: arrange them on a serving dish and add 2-3 tablespoons of White Truffle Flavored Mayonnaise. Garnish with a few Parmigiano flakes and a drizzle of extra virgin olive oil.
Gourmet Tip
- Truffle mayonnaise should only be added after cooking, away from the oven, to preserve the aroma and intensity of the white truffle.
- Also excellent with a touch of chopped chives for color and freshness.
